Three moves
Starch plus fire. Yesterday’s rice, bread, or potato wants a hot pan and fat. That is the crust. Then a strong seasoning: soy, chili crisp, za’atar, curry leaves, salsa. Then something fresh so it does not taste like a reheat: herb, lime, raw onion, a runny egg.
