Hyderabad’s dum biryani is a courtly trick: raw-marinated meat and half-cooked rice finish together in a sealed pot, so steam, not stirring, does the work. The sealed dum is why the rice stays separate and the chicken stays succulent. It is festival food, wedding food, and Friday food — never a weeknight scramble, always a reason to gather.
Ingredients

- chicken thighs1.2 kg
- yogurt1 cup
- onions3 large, sliced
- ginger-garlic paste3 tbsp
- green chilies4
- mint1 cup
- cilantro1 cup
- saffron1 pinch, soaked in warm milk
- biryani masala2 tbsp
- ghee4 tbsp

Method

Rinse the basmati until the water runs almost clear, then soak 30 minutes. Drain well.

Fry the sliced onions in ghee until deep mahogany. Lift half out for garnish.

Marinate chicken with yogurt, ginger-garlic, biryani masala, chilies, half the herbs, lemon, salt, and a handful of fried onion.

Parboil the rice in heavily salted water with a bay leaf and cardamom until 70% cooked. Drain.

Spread the marinated chicken in a heavy pot. Layer rice over it, then saffron milk, remaining herbs, fried onion, and a last spoon of ghee.

Seal the lid (dough if you have it) and cook on high 5 minutes, then the lowest flame 25 minutes. Rest 10 minutes before opening.

Gently fork the layers together at the table so the saffron streaks stay visible.
